One of my all-time favorite meals! You won’t believe how good it is!
Sausage and Orzo
Serves 6
Ingredients:
3 1/2 Cups Low Sodium Chicken Broth
2 tbsp Extra Vigin Olive Oil
1 lb Spicy Italian Sausage
1 cup Diced Onion
2 tsp minced garlic
1/2 tsp Red Pepper Flakes
2 cups dry Orzo Pasta
1/2 cup dry white wine
Salt & Black pepper to taste
Procedure
Heat oil in large skillet over medium heat and add sausage until cooked. Slice sausage rounds 1/4 in thick, and transfer to plate for now
In same pan, saute onions till brown and softened, add garlic stirring constantly about 2 minutes. Transfer to bowl
Add Orzo to the same pan, stirring to coat Orzo with residual oil, about 2 minutes.
Deglaze the pan with white wine, scraping everything from the bottom and add 1 1/2 cups of chicken broth, stirring constantly till almost absorbed. Add another cup of broth and repeat then add remaining broth.
Stir in Sausage and onions, add crushed red pepper, add salt/pepper to taste.
