Sausage and Orzo

One of my all-time favorite meals! You won’t believe how good it is!

Sausage and Orzo

Serves 6

Ingredients:

  • 3 1/2 Cups Low Sodium Chicken Broth
  • 2 tbsp Extra Vigin Olive Oil
  • 1 lb Spicy Italian Sausage
  • 1 cup Diced Onion
  • 2 tsp minced garlic
  • 1/2 tsp Red Pepper Flakes
  • 2 cups dry Orzo Pasta
  • 1/2 cup dry white wine
  • Salt & Black pepper to taste

Procedure

  • Heat oil in large skillet over medium heat and add sausage until cooked. Slice sausage rounds 1/4 in thick, and transfer to plate for now
  • In same pan, saute onions till brown and softened, add garlic stirring constantly about 2 minutes. Transfer to bowl
  • Add Orzo to the same pan, stirring to coat Orzo with residual oil, about 2 minutes.
  • Deglaze the pan with white wine, scraping everything from the bottom and add 1 1/2 cups of chicken broth, stirring constantly till almost absorbed. Add another cup of broth and repeat then add remaining broth.
  • Stir in Sausage and onions, add crushed red pepper, add salt/pepper to taste.
