Texas Caviar

Ingredients:
1 can black eyed peas
1 can black beans
1 can shoepeg (white) corn
1 jar chopped jalapeno pepper (or to taste)
1 jar of chopped pimento
1 med chopped red onion
1 stick celery chopped
1 bag scoops - Frito or Tostitos

Rinse and drain the black eyed peas and black beans.  Heat 1/2cup apple cider vinegar, 1 cup olive oil and 1 cup sugar just to dissolve the sugar.

Put all in a large bowl add the vinegar mix stir to coat and let sit overnight in the fridge.  Drain and serve with scoops.
